Hyderabad’s dum biryani is a courtly trick: half-cooked rice and a spiced filling finish together in a sealed pot, so steam, not stirring, does the work. The vegetable version is festival food in its own right — potatoes drinking the masala, cauliflower keeping its bite, fried onion for sweetness. It is Friday food and wedding food, never a weeknight scramble, always a reason to gather.
Ingredients
- basmati rice3 cups
- potatoes2, cubed
- cauliflower2 cups florets
- carrots2, sliced
- green beans1 cup
- yogurt1 cup
- onions3 large, sliced
- ginger-garlic paste2 tbsp
- green chilies4
- mint1 cup
- cilantro1 cup
- saffron1 pinch, soaked in warm milk
- biryani masala2 tbsp
- ghee4 tbsp
- lemon1
Method
- 1
Rinse the basmati until the water runs almost clear, then soak 30 minutes. Drain well.
- 2
Fry the sliced onions in ghee until deep mahogany. Lift half out for garnish.
- 3
Toss the vegetables with yogurt, ginger-garlic, biryani masala, chilies, half the herbs, lemon, salt, and a handful of fried onion. Rest 20 minutes.
- 4
Parboil the rice in heavily salted water with a bay leaf and cardamom until 70% cooked. Drain.
- 5
Spread the marinated vegetables in a heavy pot. Layer rice over them, then saffron milk, remaining herbs, fried onion, and a last spoon of ghee.
- 6
Seal the lid and cook on high 5 minutes, then the lowest flame 25 minutes. Rest 10 minutes before opening.
- 7
Gently fork the layers together at the table so the saffron streaks stay visible.
