Janmashtami Panjiri

Roasted wheat flour, ghee, nuts, and a little sugar. The prasad of Krishna’s midnight — satvik, crumbly, eaten by the handful.

Panjiri is prasad that doubles as food for a fasting night: slow energy, ghee, wheat. Mathura and the north make it without onion or garlic, which this already has none of. The ginger is for the stomach at 12:01 a.m. Do not make it pale; pale panjiri tastes of flour.

Ingredients

  • wholewheat flour (atta)2 cups
  • ghee3/4 cup
  • powdered sugar3/4 cup
  • almonds1/4 cup, chopped
  • cashews1/4 cup, chopped
  • raisins2 tbsp
  • lotus seeds (makhana), optional1/2 cup, crushed
  • cardamom1 tsp
  • dried ginger powder1/2 tsp

Method

    Warm ghee. Roast the flour on low, stirring, until it turns biscuit-coloured and the raw smell goes — 15 minutes. Add makhana if using.

    Stir in nuts and raisins for 2 minutes. Take off the heat.

    When it is warm, not hot, mix sugar, cardamom, and ginger. It should look like damp sand.

    Offer a bowl at midnight. Eat the rest over days; it keeps in a tin.
